The town is the oldest in Dimmit County. It was founded in 1865 by a group of fifteen families from Atascosa County led by Levi English, drawn to the area's natural springs. The name comes from those springs, which Spanish explorers described for the carrizo cane grass that grew around them. Ranching and, later, irrigated farming shaped Carrizo Springs through the twentieth century; the surrounding countryside is part of the Winter Garden region, a celebrated irrigated vegetable and onion-producing district.
